Hot Milk Cake is one of those rare treats that you either love or hate. It was served for dessert after meals at my family gatherings and it was a big deal when served to friends and family. Grandma was the only one my mother would allow to make it. She stated that her mother probably began making it about the 1940s while she lived in Virginia. None of her siblings could find a copy of the cookbook either and neither does anyone else in her immediate family.
My sister and I grew up eating hot milk cake recipes and so did our father. In fact, he made it so often we are probably the only ones who know how to make it. He would make it for special occasions such as Thanksgiving or Christmas and generally any special occasion. As far as I could determine, the origin of the sponge cake mix is somewhat of a mystery too. There were several versions of the story in the several diaries I have kept over the years and one of them mentioned a white cake mix which may have been a variation on hot milk cake recipes.
The first step in making a hot milk cake recipe is to get all of your dry ingredients together. You will need all of the following items: two cups of whole grain flour, three cups of cold unsweetened cocoa, three or four eggs, three or four cups of milk, one and a half teaspoons of vanilla, and a pinch of salt. Once you have gathered these items, you will want to beat them all with a mixer. After beating, add them to a bowl and then add your hot milk, one at a time, beating until the ingredients are combined. Next, you will want to fold in the dry ingredients.
The hot milk cake recipes that I like the best are the ones that use a lot of spices in their recipe. The most common way to do this is to use cinnamon, nutmeg, cloves, and allspice. Other spices can be molasses, cardamom, fennel, and even nutmeg. If you really like to experiment, you can also add nuts such as pecans, walnuts, hazelnuts, or almonds. This way you can create unique and delicious hot milk cakes that are sure to impress your family and friends.
You can find many hot milk sponge cake recipes online as well as in cookbooks. If you search online, you will find that there are a number of different variations of the hot milk cake recipe. Some of them call for vegetable toppings which would include carrots, celery, zucchini, and green beans. Other recipes use plain sponge cake or cupcakes and the most popular way to make this cake is by using an electric pastry blender.
To make this cake, you only need hot milk, unsweetened plain flour, sugar, vegetable oil, baking powder, and a tablespoon or so of cinnamon or nutmeg. Mix the milk, flour, oil, baking powder, and cinnamon together. Stir it until it becomes blended. Then, mix in the sugar and let it mix until completely smooth. The cake will be done when it is done in the desired consistency.
Bring the mixer to a gentle boil and add the hot chocolate milk. Once the mixture begins to boil, turn the mixer off. Fill the mixing bowl with 2 cups of the hot chocolate mixture. Once you have added the hot milk, stir it until combined. Scrape the mixture down into the cake batter.
If the hot chocolate milk flavor is too strong, you can add a teaspoon of vanilla extract and mix it well. Fill your cupcake tin about two-thirds full of the mixture and frost it as you normally would. Frost the outside of the cupcake and place it in the oven and continue to cook it until the cake is done.
